To Salt Eggs

Dissolve 2 cups of salt in 2 quarts of boiling water. (salt does not dissolve completely). Let mixture cool completely.

Place 30-33 eggs in a gallon jar. Pour the salt water solution over eggs until eggs are all covered. Also pour in any undissolved salt. To ensure all eggs are submerged, place a wad of crumpled-up foil over eggs, and place lid in place.

This is just enough solution to cover the eggs.

Salt for 45-50 days.
